Spartico Organic Cabernet Sauvignon Tempranillo 2015

The Spartico Organic Cabernet Sauvignon Tempranillo 2015 is a 50/50 blend from certified organic vineyards in the Utiel-Requena region (inside of Valencia Province) of western Spain. Utiel-Requena has a wine history dating back to Roman times. The Spartico has no detectable sulfites. Sulfites are added to wine to help it age and keep it fresh, but the Spartico Organic Cabernet Sauvignon Tempranillo 2015 is a young wine that has not been aged and is meant to be consumed young, so sulfites are not necessary. This Red blend was fermented in stainless steel tanks and saw no oak aging. The alcohol content is 13%.

The color is a dark opaque black cherry red with black highlights. The nose is fresh blackberry and cherry, lightly floral, with a hint of spice. This is a fresh, sleek, medium-bodied Red wine with a slight grip from the tannins on the mid-palate. It tastes of blackberry, black licorice and a touch of herbs. The mid-palate shows a dash of pepper and raspberry. The tannins provide good structure and the acidity is muted by the flavors of the wine. The finish is subtle but does last awhile.

The Spartico Organic Cabernet Sauvignon Tempranillo 2015 is a solid change of pace Cabernet/Tempranillo blend. The Spartico is fresh, bright and sleek, while other blends of this type tend to have oak influence and are bigger and bolder. When pairing wine and food, it is smart to look to the types of food that is available in the area that the wine was produced. So interesting cheeses, paella, and tapas are a natural choice.
