The Jaume Serra Cristalino Brut Rose’ Cava is a different take on Spanish Cava, instead of the usual combination of Xarel.Lo, Macabeo and Parellada, this Brut Rose’ is 60% Pinot Noir and 40% Trepat, an indigenous Spanish Red grape that is mainly used in Rose’ blends. The grapes are purchased from the Cellars de Can Suriol vineyards located in the Province of Barcelona inside the Penedes DO. Cava, by law, is produced with the same method used to make Champagne, two separate fermentations, the second fermentation (this is where the bubbles are added) occurs inside each and every bottle after the bottles are filled and temporarily capped. The wine is then aged in the bottle “on lees,” the dead yeast is left inside the bottle, it is later removed, for 18 months. That is the same length of time that is mandated for Champagne to be aged. Brut indicates this Bubbly is on the dry or not sweet side and the alcohol content is a mild 11.5%.
The color is salmon pink with a goodly amount of tight fine bubbles. The nose is faint and slightly candied, cherry SweeTarts, grapefruit, lemon meringue pie and crusty bread. The flavors here are almost secondary to the clean, crisp sensation the bubbles provide. There is faint cherry, buttered crusty bread, lime and soft minerality in the mix, but the refreshing nature of this Bubbly is very appealing. The combination of balanced acidity and the dry crispness of this wine, makes this a Bubbly that goes down a little too easily. This is a bottle that will be empty before you know it. The length of the finish is a mystery because you will take another sip long before the finish dies out.
This is another Jaume Serra Cristalino Cava that leaves you wondering how they can make a Cava this good for under $10. This is a solid, enjoyable, food friendly, fun, adult Bubbly that is hard to beat for the price.
