Black Swan Shiraz 2007

What a difference a day makes. My first impression of this wine was that it had to much oak and was below average. But I let another day go by and now that it has been opened for an entire day I have a completely different impression.
It has a very dark red almost purple color to it which looks very nice. This wine is maybe not quite ready yet because it is after all a 2007 Shiraz that I’m drinking in 2008. Shiraz usually needs a little more time before its ready to consume.
On the nose of this wine I got a little blackberry and cocoa with a faint hint of oak.
On the taste you will be met with the sweet cocoa. Not that it is to sweet, its very nice. It mixes well with the blueberry and black cherry and it holds this same taste through to the finish. There is no bitterness on the end of it.
If you open this bottle today and start drinking it right away you will get more of an oaky bitter taste. You have to let this wine breathe for a long time before drinking it. This is probably my favorite $6 wine that I’ve tasted in 2008… but remember, you have to let it breathe.
